Protein Waffles with a Cranberry Sauce

I was dying to trick my boyfriend into eating these healthier pancakes. Knowing he would cover them in butter and syrup, I was excited to sneak in some extra protein and fiber!

I found Kodiak Cakes Flapjack and Waffle Frontier Mix at the grocery store by accident. (Okay, I bought it for the packaging)  It has 15 grams of protein (per cup) and 3 grams of fiber.

To accompany these protein packed babies, I made a cranberry sauce with just a few simple ingredients. Details below!

Pancakes:

This makes about 3 Waffles

1 Cup Kodiak Cakes Flapjack and Waffle Frontier Mix

1 Cup Water

 

Cranberry Sauce:

3/4 cup fresh cranberries

Organic Honey

Coconut Sugar

 

Instructions:

In a small sauce pan on medium heat, coat bottom of the pan with honey and add in cranberries.  Stirring occasionally, add in coconut sugar. Cook for 3-5 minutes. Sauce is done once cranberries are cooked down and sauce is thicker consistency. (Sauce should stick to spoon when stirring)
