Zucchini Waffles

The struggle is real this holiday season to eat healthy breakfasts! With tons of left overs every morning, it’s hard not to grab the cookies instead of cooking a healthy and nutritious meal.  I could have eggs any time of day, but breakfast is where it really counts! Starting your day off with a healthy, protein filled meal sets the stage for the rest of the day.

Start with these Zucchini Waffles; a healthier take on a traditional waffles.

(no batter required!)


You can use any combination of the ingredients below, cook these in a waffle maker until golden brown, and voila! Top with bacon, egg, or skinny fried chicken for a complete meal!


Zucchini (shredded) – 1 Medium

Egg Beaters (you can sub real eggs) – 1 cup

Parmesan Cheese – 1/8 cup

Italian Panko Bread Crumbs – 1/4 cup


Combine in a mixing bowl and place about 1/3 of the mixture into waffle maker at a time. Once edges are golden brown and eggs are cooked all the way through they are done!
