The Best Sweet Potato Fries

Sweet potato fries with parmesan cheese and parsley

The proof is in the parchment paper! These are so crunchy and delicious and great side dish. Pair these with any protein and its a perfect meal solution for a busy night.

 

Ingredients

2 Medium Sweet Potatoes (I use the easy steam kind)

Parmesan Cheese

Parsley

Salt & Pepper

Olive Oil

 

Instructions

Line baking sheet with parchment paper and preheat oven to 400 degrees. Slice potatoes into 1/5 inch thick wedges. I placed my sweet potatoes in the microwave for 2 minutes before slicing so it’s easier. Place on parchment paper lined baking sheet and sprinkle with salt and pepper and drizzle olive oil. Cook for a bout 20 minutes or halfway through and flip potatoes. Sprinkle with parmesan cheese and fresh chopped parsley.  Cook the rest of the way through, and enjoy!
