Are you kidding me? The beauts look like traditional caprese, but wait, there’s protein? Uhm, yes please. I’m a first time egg poacher, long time lover of eggs benedict so this was a bit of a test for me. Next I cut thick (must be thick to hold up the eggs) slices of tomatoes. I topped each with the egg, some rough chopped basil, and a little drizzle of store bought balsamic reduction.
A certain someone was definitely jealous of my breakfast this morning. Granted this is not ideal for a quick and healthy meal, but hey its the weekend!
