Game day? Bring on the nachos, wings, pizza…. Believe me, I’ll take any excuse for a cheat day. But, I’m pumping the breaks on stuffing my face because I know that unhealthy days lead to more unhealthy days that lead to guilt that lead to taking GIANT steps backwards!
So I’ve got some healthy bites to stay on track, perfect for hosting, or any day!
First up, Chicken Salad Cucumber bites made with non-fat greek yogurt!
For some added sweetness and crunch add seedless red grapes and chopped almonds! Full recipe below…
1 Rotisserie Chicken
Red Seedless Grapes
Non-fat Plain Greek Yogurt
Dill (Fresh or Dried)
Salt & Pepper to taste
Instructions: Remove the skin from the Rotisserie chicken. Using only the meat, shred chicken into a large mixing bowl. (This is a dirty job but I swear its worth it) Next, scoop 1/2 cup greek yogurt and 1/4 cup light mayonnaise and combine with shredded chicken. Chop seedless grapes into halves or quarters and fold into the meat mixture. Remove the seeds from half a cucumber, about 4-5 inches worth and roughly chop and combine with the other ingredients. I chopped about 1/4 cup of almonds and folded that in as well. Use garlic powder, dill, salt and pepper to taste!
