Nonnas Potato Pizza

So after a week of being sick with the flu, all I wanted was pizza. Carbs on top of carbs, cheesy, crunchy, pizza.  My grandmother used to make this potato pizza when I was younger.  In fact, she would make us some truly authentic, rustic italian food when we got home from school, that made all of my friends jealous.  I would be running home to get some fried dough with homemade tomato sauce. Mmmm…

In honor of my grandmother, I wanted to recreate her famous Pizza Di Patate (potato pizza) and hopefully I did it justice.

 

 

To make two pizzas:

Ingredients:

10 Small Yellow Potatoes (peeled and sliced thin)

4 Sups Shredded Mozzarella Cheese

2 Pre-made Pizza Dough

Extra Virgin Olive Oil

Fresh Rosemary

 

Instructions:

  1. Preheat oven to 375˚
  2. Roll out pizza dough, lightly floured to prevent sticking
  3. Knead dough to fill oven safe cooking pan greased with cooking spray
  4. In a mixing bowl, toss potato slices in olive oil, and salt & pepper
  5. Layer cheese on dough, then sliced potatoes, slightly overlapping
  6. Sprinkle fresh rosemary on top
  7. Bake pizza for 20-25 minutes or until potatoes are golden brown (Cooking time may change depending on pan size)
