Pesto Pasta Salad

My pasta is summer ready, but I am not! I’ve been cleaning up my diet (well mostly) in preparation for warmer weather. Β This light and fresh pasta dish really curbs my carb cravings without weighing me down, literally.

I am 100% Italian, and although I prefer homemade pasta any day of the week, adding some quality ingredients like prosciutto, and some parmigano reggiano cheese makes me feel like home πŸ™‚

Ingredients:

Pesto (homemade or store-bought)

Bowtie pasta

Cherry Tomatoes

Cucumbers

Red onion

Baby Arugala

Parmigiano Reggiano

Prosciutto

Instructions:

  1. Cook pasta until al dente
  2. Add 2-3 tablespoons pesto while pasta is still hot to mix
  3. Once pasta has cooled, add diced vegetables and arugula
  4. Add grated cheese to top
