Stop everything you’re doing right now! These tacos are probably my best yet, and boyfriend approved, which is a rarity!
Throw together a few simple ingredients for this delicious (and still) healthy meal!
Pork Loin (1 Package)
1 Jar No Sugar Added BBQ Sauce
2-3 Cups Chicken Stock
2 Tbsp Cumin Seasoning
1/2 Tbsp Adobo Seasoning
1/4 Head Purple Cabbage Shredded
1 Mango peeled and cubed
3 Corn Cobs (Oven Roasted with Butter)
1/2 Fresh Lime Juice
1/2 Tbsp Chili Powder (test for spiciness)
1/2 Tbsp Cayenne Pepper
1/3 Cup Chopped Cilantro
1/3 Cup Low Fat Mayo (Can Sub Non-fat Greek Yogurt for extra healthy-ness)
For the Pork:
Cook the pork in a crock pot on high for 5 hours with the chicken stock, seasoning and half the bottle of BBQ sauce. Removed cooked meat and place on baking sheet to shred with a fork. Coat the pork with the remaining sauce. Place baking sheet in oven on 350 for 10 minutes to crisp up!
For the Slaw:
Meanwhile, roast the corn on another baking sheet until golden brown and fully cooked through. Once cooked and cooled, cut corn off the cob and combine in a mixing bowl with the other ingredients.
