Almond Joy Bites

OK, you’ve heard of energy balls? Right. Welp, that was definitely the intention but these are a little less heavy on the honey and nut butters so they ended up being more like bite size bars.

I LOVE almond joys and these are perfect for when you need a little bit of something sweet that won’t get you off track of your healthy eating plan. These are gluten free and about 70 calories each.  This recipe made about 20 little bars which was way too much for just me to eat so I had to bring these into work to share.

Ingredients:

1 Cup Rolled Quaker Oats

1/2 Cup Almond Butter

1/3 Cup Shredded Coconut (and some to dust the top with)

1/4 Cup Honey

1 Ounce or 1 Handful Dark Chocolate Chips

1 TBSP Chia Seeds

Instructions:

Combine ingredients in a large mixing bowl. The consistency should be a little thicker than cookie dough, moist enough to hold together but not too wet. Once mixture is done, place into a parchment lined baking sheet and pack tightly into a large square.  Let cool in the refrigerator overnight.  Once hardened, cut into 2 inch squares.
